Pretty unique stuff.\u003c\/p\u003e\n\u003cp\u003eThe vast majority of the worlds cocoa is grown on small holdings, farms with somewhere up to 20 trees, mixed in with a variety of other crops. They're close together and they process their cocoa and sell it as a co-operative. As a result, it's harder to process every harvest from every farmer in a way that suits their cocoa. What they're doing has to work for the group. So the cocoa is usually bought and blended with many other harvests to make a largely consistent flavour profile that's relatively flat.\u003c\/p\u003e\n\u003cp\u003eThen there's plantations - let's save those thoughts for our next rendezvous.\u003c\/p\u003e\n\u003cp\u003eThen there's direct from farmer, or family, like this cocoa. The short of it is it's a setup that means cocoa can be harvested and processed in a way that allows each and every batch to shine. It's significantly more delicious. And special.
